Tis the season to switch things up for breakfast, and we've got the perfect protein packed recipe to tantalize your taste buds. Our Pumpkin Protein Waffles are fluffy, easy to make, and will leave you feeling warm and cozy on a cool winter day. So let's get to it!
What you need:
1 Scoop of Rock Solid Nutrition Grass-Fed Whey in Maple Cinnamon French Toast
1/2 cup organic all purpose flour
1/2 cup organic tapioca flour
1/4 tsp baking powder
2 whole eggs
1 cup pumpkin puree
2-3 tsp pure maple syrup
1 tsp pure vanilla extract
1 tsp pumpkin spice/ cinnamon
Get cooking:
- Preheat waffle iron to high heat
- Combine all the ingredients in a blender. Blend until smooth. Batter should be on the thicker side; if it’s too thin, add 1 tsp at a time of all purpose or tapioca flour
- Spray the waffle iron with cooking spray ( I like to use propellant free olive oil cooking spray) . Add in 1/4 cup of the batter to the waffle iron, close and cook until golden brown on the outside. Transfer to a plate and repeat with the remainder of the batter. Let the waffles sit for a couple of minutes for the best texture.
- Top with more maple syrup, or honey, and enjoy!
